Hot spinach and artichoke dip, Move over Fridays.

I love hot dips, they make everything feel so festive. I was looking in the cupboard for some inspiration and wouldn’t you know I found some on my Knorr Vegetable recipe mix. It had a recipe on the back for a hot dip. I decided right then that we should run to Meijer, I needed other things anyways, I also needed to eat this for dinner, I mean as a side dish of course.

So here is the recipe taken from the back of the Knorr Vegtable Recipe Mix

Hot Spinach and Artichoke dip

1 pkg frozen chopped spinach, thawed and squeezed dry

1 pkg cream cheese softened

3/4 C of Mayo

1 and 1/2 C of shredded cheese (cheddar or monterey jack) divided

1 pkg. Knorr Vegetable mix

1 can artichoke hearts drained and chopped

2 cloves of garlic finely chopped

Mix all together except a 1/2 C of the shredded cheese, put in an oven safe dish and cook at 350 for 30 min, then sprinkle the rest of the cheese and cook for another 5 min. or until heated through.

We served it with corn chips and it was divine, I ate too much of it.
