Brownies with a twist.

This post is for Jenelle who just this week got her little guys allergy test results back, Lots new to get used to.

I was watching Martha Stewart (a rare occasion) and Babycakes NYC was featured, this recipe was shared. I thought of some friends of ours who these would work perfectly for, he doesn’t do Gluten and she can’t handle dairy, but they still deserve chocolate people!!

Enjoy, PS My husband who is a chocolate freak, enjoys these immensely.


This recipe is free of wheat, gluten, dairy, casein and eggs

1/2 cup canola oil, plus a little extra for pans

3/4 cup plus 2T. garbanzo bean and fava flour

1/4 cup potato starch

2T. arrowroot

1 cup unrefined sugar OR 10T. +2tsp.  agave nectar

2 and 1/4 tsp baking powder

1/4 tsp. baking soda

1/4 tsp. xanthan gum

1 tsp salt

1/2 cup unsweetened cocoa powder

1/2 cup unsweetened applesauce

2 T. pure vanilla extract

1/2 cup brewed coffee OR hot water (I have only ever used water)

2 cups vegan gluten free chocolate chips, such as tropical source or Sunspire

1) Preheat oven to 325 brush your mini muffin pans with oil, set aside

2) In a medium bowl, whisk together flour, potato starch, arrowroot, sugar, baking powder, baking soda, xanthan gum, salt, and cocoa powder; set aside. In a large bowl mix together applesauce, 1/2 cup of canola oil, and vanilla. slowly add flour mixture, stirring to combine. Stir in coffee OR water until it forms a batter. Fold in chocolate chips.

3) Place 1 T. batter into each prepared muffin cup. Transfer muffin pans to oven, bake until a toothpick comes out clean , 12 to 15 min. Let cool completely on a wire rack before removing.

  1. I think I saw that same episode before. I ordered the Babycakes cookbook for my sis-in-law after she got the allergy test results on my niece. It’s a great book.

  2. Thank you so much. I’m shopping for all new ingredients this weekend, and this gives me a place to start. The good news is I found a bunch of products (snack stuff mostly) at Target and this little scratch/dent store in our area called “Cheep Foods”. They carry a bunch of organic stuff and I score big at a fraction of the cost. God is providing. Here’s hoping my little guy likes them. I’ll have to check the book out.
